This intimate, multi-course menu begins with King Crab Chawanmushi, a delicate umami egg custard finished with citrus soy glaze and airy butter foam. Followed by an elegant Wagyu Carpaccio and Cigalas, featuring Japanese Wagyu, sweet cigalas, black sesame, and luxurious Amur Ossetra caviar.
Vegetable-forward indulgence shines with Honey Miso Eggplant, accented by pine nuts, sesame, and crispy rice pearls, before the centerpiece: a show-stopping Ribeye “Chuletón” crafted from 100% Akaushi brown-hair Wagyu raised in Flatonia, Texas. Rich, buttery, and meant to be shared.
End on a sweet note with our Chocolate Hazelnut Mousse, layered with chocolate crémeux, crispy rice pearls, chocolate hazelnut ice cream, and chocolate espuma.
